Green Noodles Bolognese

FOR THE NOODLES:

5 or 6 cups flour

6 eggs

½ pound cooked spinach well drained and puréed

Make a ring of the flour, and place eggs and spinach inside. Blend and knead very well by hand or use an electric mixer with a dough hook. Roll out several times in a pasta machine or with a rolling pin (although this takes some skill) until paper-thin. Allow to dry 15 to 20 minutes. Cut into strips about ¼ inch wide. Or buy green pasta if you prefer.

FOR THE SAUCE:

¾ pound chopped beef

¾ pound chopped fat pork or 2 slices lean salt pork

1 onion, finely chopped

1 carrot, finely chopped

1 stalk celery, chopped

1 clove garlic, chopped

¼ cup chopped parsley

Butter

Salt and pepper

½ cup meat stock or bouillon

1 tablespoon tomato puree

Combine the meat and vegetables, and sauté in butter until nicely colored. Salt and pepper to taste, and add half the broth. Cook down, then add the remaining broth and the tomato puree. Cover, and cook 1 hour longer.
